Quick to cook and delicious, these Marinated Salmon Portions with Garlic & Herb Crumb are perfect with grilled asparagus spears and soft poached eggs. Prepare the asparagus by breaking the dry ends of the spears off and removing any tough outer flesh carefully with a vegetable peeler. Toss the spears in a little olive oil, crushed garlic and sea salt flakes and transfer onto a lined baking tray. When the salmon has approximately 8-10 minutes left to cook put the asparagus spears into the oven. You will know they are ready when they feel slightly soft to the touch. While the salmon and asparagus are cooking, poach a couple of eggs to soft set, about 4 minutes.
