Strawberry & white chocolate muffins recipe

Preparation time: 10 minutes
Cooking time: 25 minutes
Bakes: 12 muffins

What you’ll need:

• 50g butter (room temperature)
• ½ cup caster sugar
• 2 eggs
• 1 cup milk
• 1tsp vanilla extract
• ½ cup self-raising flour, sifted
• 250g strawberries washed, hulled and roughly chopped
• ½ cup of white chocolate chips

How to prepare:

1. Preheat oven to 180°C or 160°C fan forced. Line a 12-hole muffin tin with patty pans
2. Beat the butter and sugar with an electric mixer until pale and creamy.
3. Beat in the eggs, milk and vanilla.
4. Use a spatula to fold in the flower until just combined. Gently stir in the strawberries and white chocolate chips.
5. Spoon the mixture into the patty pans. Bake for25 minutes until cooked through.
